INGREDIENTS
250g cream cheese, softened
80g icing sugar
200ml double cream
6 tbsp Cookies & Cream Mellori
8 chocolate sandwich cookies, crushed
Extra crushed cookies, to garnish
INSTRUCTIONS
STEP 1
Beat the cream cheese and icing sugar together until smooth.
STEP 2
In a separate bowl, whip the double cream to soft peaks.
STEP 3
Gently fold the whipped cream into the cream cheese mixture.
STEP 4
Fold in the crushed cookies, keeping some texture rather than mixing completely smooth.
STEP 5
In serving glasses, alternate layers of the cream mixture with swirls of Cookies & Cream Mellori, using a skewer to create a marbled effect.
STEP 6
Chill for at least 2 hours to firm up.
STEP 7
Top with extra crushed cookies and a final drizzle of Méllori before serving.
